Why Organic?
As we know we are contaminating our food constantly with insect repellent, fertilizers, and genetically modified planting.  With an organic process gmo modifications  are banned, and other growing proscesses are often water soluble/non hormone disrupting. 
 
Mold Issues?
We often receive coffee right from the farm.  We dont use a third party that stores  beans for years at a time.  We only buy beans from the present growing season.  Because of this, we are out of stock of certain countries of origin for months at a time until the season begins again.
